FUNNEL CAKE FRYERS AND FUNNEL CAKE EQUIPMENT

Funnel Cakes are a fried pastry snack - consisting of batter that is poured through a "funnel" (or specialized funnel cake pitcher) directly into a rounded mold ring approximately 6" to 8" in diameter and then immersed into a funnel cake (shallow) fryer.

As the dough comes out in approximately a ¼" diameter "pour," the web of batter is crisscrossed within the circular diameter to form a lattice which sticks together. Depending upon the temperature and the diameter of the "pour" out of the funnel or pouring can, it may take approximately one minute per side to brown off and sufficiently cook the batter.

When the batter is cooked brown on the bottom (you'll know, because the little stringy parts extended to open areas are brown) take the fork - lift up the funnel cake up near one of the edges - place the circular strainer underneath - and gently turn it over. Then fry the other side - soon as both sides are browned, set it on a 10" plate - liberally sprinkle confectionery sugar and it is ready now for sale.

HOW DOES FUNNEL CAKES DIFFER FROM FRIED DOUGH, ELEPHANT EARS OR FRYER SAUCERS?

While both "pastry snacks" are cooked best in our FW-12 Fryers, the basic ingredients are quite different. Frying Saucers are a yeast dough type product - Funnel Cakes are a batter prepared with leaving agent - but basically without the yeast.

Funnel Cakes cook at about 375 to 400 degrees. Frying Saucers and Elephant Ears require about a 350 degree cooking temperature. If you roll them out, the Frying Saucers cook about 30 seconds to a side - Funnel Cakes take up a little less room, because you merely add 90 ounces of water (6 ounces less than 3 quarts) in a mixing container- add the flour gradually- whisk the mixture- let it "wet out" pour it from the large mixing container into the small one-half gallon size pitcher - fill up your "funnel pouring pitcher" with the half gallon size container. It's a lot easier this way. Frying Saucers require a lot more space for "proofing" (letting the dough rise) rolling and finishing.

WHAT "TOOLS" ARE REQUIRED TO MAKE FUNNEL CAKES?

At a minimum you will need a wire whisk - a half gallon pitcher - and a special funnel type pouring pitcher. In addition, you have the fork, spatula, circular strainer/lifting tool, the "sugaring Pan" and the sugar sifter. Our Funnel Cake Tool Kit combines these items into one package.

Your food cost is low in Funnel Cakes you can afford to use the original Pennsylvania Dutch Funnel Cake Mix (not the imitation Pennsylvania Dutch Mix or any other imitation). In fact, if you saved your entire mix expense, you wouldn't save much - this is basically an 85% gross profit item. Therefore, the goal has to be to maximize the 85% profit chunks of money - and not worry about cutting your food cost a penny or two!

HOW TO CHOOSE A FUNNEL CAKE FRYER

How fast a fryer will cook is largely based on "recovery time". Recovery time is the amount of time the fryer needs to get back to optimum temperature after the product has "shocked" the oil. Once your mix touches the oil the temperature will drop (shock) and then it must recover and get back up to temperature to cook quickly, properly and reduce oil absorption by the mix. Gas funnel cake fryers will be the fastest.

ELECTRIC FUNNEL CAKE FRYERS

These electric funnel cake fryers also work great for Elephant Ears, French Waffles, Fry Bread, Churros and Donuts. Funnel Cake fryer capacity depends on the number of watts (which can depend on your line voltage), the depth of your cooking oil, the quality of your funnel cake mix, the temperature of your batter, the amount of batter you pour and your unwillingness to wait a few moments if your oil has declined in the "high oil absorption" range. When you add oil, you lose rhythm and production suffers dramatically.

HOT SHOT SHALLOW FRYER

The Hot Shot funnel cake fryer is the same dimensions as the FW-12 but offers 1000 more Watts for faster recovery time. 230 Volts, 6500 Watts

DELUXE HOT SHOT SHALLOW FRYER
This high output funnel cake fryer features a 6600 watt ribbon heat element and offers over 30% more production than the standard Hot Shot.

K-6 SHALLOW FRYER

This gas funnel cake fryer is a larger version of the small funnel cake fryer. Also uses bottled gas and has a larger burner for lightening quick recovery. 50 pound oil capacity and 95,000 btu's. Cooks six 8" funnel cakes at one time. Highly recommended for high output production.

NOTE - Gas regulators are supplied with these fryers. Must be professionally setup and installed.

TIP - Use 8" mold rings on platforms to "form" the Funnel Cakes. "Swish" the formed Funnel Cake into the open shortening as soon as possible. This also creates convection and reduces grease absorption.
